Cravable Cranberry Jewel

Ingredients:

1/2 cup (4 oz.) Kozy Shack Chocolate Pudding
1 oz. (approximately 1 cup) of pound cake (cut in cubes)
4 tablespoons of cranberry raisin mixture
Cranberry Raisin Mixture (Makes approximately 5 servings):
1 cup of fresh cranberries
3/4 cup of water
1/2 cup of sugar
1/4 cup of orange juice
1/4 cup of golden raisins
pinch of salt
Garnish: dollop of whipped topping
1 sprig of mint leaf

Preparation:

To make cranberry mixture, place cranberries, water, sugar, orange juice, golden raisins, and salt into saute pan and bring to a boil. Stir until blended thoroughly. Simmer on low heat for 2 - 3 minutes until cranberries are soft. Let cool. Place half of pound cake cubes into bottom of parfait glass. Follow with 2 oz. of Kozy Shack Chocolate Pudding, then 2 tablespoons of cranberry raisin mixture. Repeat process. Garnish with dollop of whipped topping and mint leaf.
