Outrageous Raspberry Crumble

Creamy, raspberry flavor with a touch of crunch.


Ingredients:

Filling: 1/2 cup (4 oz.) Kozy Shack Rice Pudding
10 fresh whole raspberries (halved)
1 tablespoon of simple syrup
Crumble Mixture: Makes approximately 3 servings
2 cups of puffed rice
4 tablespoons of brown sugar
6 tablespoons of sweet butter (room temperature)
1 1/2 teaspoons of cinnamon
Simple Syrup: 1/4 cup of water
1/4 cup of sugar
To make simple syrup, boil water, add sugar, and dissolve. Let cool.
Garnish: 2 whole fresh raspberries.
Optional garnish: Any fresh fruit or whipped topping.

Preparation:

Pre-heat oven to 375°F. To make crumble mixture, mix puffed rice, brown sugar, butter, and cinnamon in bowl. Set aside. Mix Kozy Shack Rice Pudding, raspberries, and simple syrup together. Spoon into a 4 or 6 oz. baking dish and place on cookie sheet. Sprinkle 4 tablespoons of crumble mixture over top and place in oven. Bake for 10 - 12 minutes or until golden brown. Remove from oven, let sit 2 - 3 minutes before serving. Garnish and serve.
